My Favorite Snack

One of my favorite go-to snacks are these “energy balls” as a healthier option when I want something sweet. I usually double the recipe below because they are a little time-consuming to make when it comes to rolling them into balls. But once they’re made, they’re so delicious and easy to grab. Here’s how to make them:

Healthy Energy Balls

1/2 cup creamy peanut butter

1/3 cup honey

1 tsp vanilla extract

1 cup old fashioned oats (raw)

2/3 cup toasted, sweetened shredded coconut

1/2 cup ground flaxeseed

6 tbsp chocolate chips (I usually eyeball this)

Mix the wet ingredients together then add in the remaining ingredients and mix until evenly coated. Place the mix into the fridge to firm it up a bit (about 25 minutes). Then shape into balls (I use a cookie scoop). They usually break apart initially, but I squeeze and alternate in my hands until they press together into a solid ball. Then store in an airtight container or ziplock bag and keep in the fridge.

I love using Sundays as my prep days for the upcoming week. It’s a great day to meal prep, so you have some healthy options to grab when you’re hungry and have little time. Meal prepping is easier with the right tools and kitchen gadgets to prepare and cook your food with.

An airfryer is an easy option to cook vegetables, chicken, potatoes and so much more. This airfryer from Walmart is as chic as it is convenient. It comes in a variety of colors, and I don’t mind leaving it on my counter all the time.

You also want to make sure you have the basics for meal prepping. Things like mixing bowls, measuring spoons and cups are all great basics to keep on hand in the kitchen. You’ll need those for making the energy ball recipe.

If you don’t want to make full-on meals on Sundays but want to get a head start on prepping food for the week, a handy thing to do is chop up your vegetables you’ll need. For example, if you’re having stir fry one night, chop your peppers, broccoli etc. and store in a container until you’re ready to cook them. If you’re doing a lot of chopping, a quality knife set is a must to make it easier.
