Whenever I need to contribute to a party this is my go-to dessert because it’s just as easy to make as it is to disappear. Now I don’t want to take any credit for the recipe, it’s from my Maw Maws’ cookbook (really her index card stash), but that’s when you know it’s good!
Ingredients:
A box of yellow cake mix
2 eggs
Semi-sweet chocolate chips
(I also like using the mini chips)
1/2 cup oil
Pre-heat your oven to 350 degrees while you mix all the ingredients together. I usually add the chocolate in after the dough is mixed. I recommend a cookie scooper to evenly place the cookies onto a tin foiled pan. Every oven is different but I find about ten minutes to be the magic number. After about 8 minutes I usually watch the oven like a hawk because nobody wants a burnt cookie! Sometimes the second batch takes less time than the first after the dough has sat around.
If you don’t have a cooling rack, take them out a minute or two early if you let them cool on the pan. I have experimented with a box of chocolate cake mix if you want double chocolate that is good, too!
